Yes, you can put menrengue pies in the refridgerater. I was always afraid to make it too but, it's so easy! Make sure that none of the yellow gets in the whites as the fat will kill the menrengue. Bring the whites to room temp. Use a glass or metal bowl that is chilled for the whites. 3 egg whites 1/4 spoon cream of tartar 3/4 cup very fine sugar (not regular table sugar) Put the whites and cream of tartar in the bowl and whip on high until you get stiff peaks, then slowly add the sugar while still beating. Voila! My Mother made the absolute best homemade pies when I was growing up, I just never could understand why she'd put that yucky stuff on top of them, lol. Now I can appreciate her cooking talents, her meringue's were absolutely perfect and beautiful every single time :) |
