Merengue
11.21.07 (3:31 pm)   [edit]
Stupid Question

Can I store pies with merengue on them in the fridge? Or will it make the merengue weep?
AKA Runny.. My brother requested chocolate pie with merengue and it actually turned out very good :)
I had to get out the propane torch to brown the top but, what the hey, right? :) No worries, I made a call to my MOM!
In the fridge it goes!

Happy Thanksgiving! I wish I could answer your question about meringue, but I've always been too afraid to make any!

Well, now I can answer the question. Yes, you can put menrengue pies in the refridgerater.

I was always afraid to make it too but, it's so easy!

Make sure that none of the yellow gets in the whites as the fat will kill the menrengue. Bring the whites to room temp. Use a glass or metal bowl that is chilled for the whites.
3 egg whites
1/4 spoon cream of tartar
3/4 cup very fine sugar (not regular table sugar)

Put the whites and cream of tartar in the bowl and whip on high until you get stiff peaks, then slowly add the sugar while still beating.

Voila!

I don't even like menrengue ;)~

Happy Friday!

*gasp* you don't like meringue?! You make it sound so easy to make...just keep beating until it comes to fruition. BWAHAHAA

I thought meringue success was partly related to humidity levels. On the other hand, what do I know? I didn't think you could put it in the refrigerator.

Thank God for moms. They know everything.

((hugs.))

You are correct! That's another reason I was so pleased. It was raining the day I was making pies.

I don't like meringue either!! Despise it actually. My Mother made the absolute best homemade pies when I was growing up, I just never could understand why she'd put that yucky stuff on top of them, lol. Now I can appreciate her cooking talents, her meringue's were absolutely perfect and beautiful every single time :)
